Delicious Keto Broccoli Cream Soup Recipe
Remember as a child your mother would tell you to eat your greens? Well, she was right! However, you won’t need to coax anyone to try this keto-friendly broccoli soup because it’s rich, delicious and super healthy!
Forget being bland and bitter, this broccoli soup contains pine nuts and coconut cream to give it a richer, creamier flavour, making it an ideal choice for lunch. The pine nuts tick the ‘healthy fats’ box and will also help you to stay fuller for longer and this delicious organic coconut cream gives what could have been a bitter soup, a sweeter kick.
Avoid any wastage by using the stalks of your broccoli as well as the florets, which have just as much flavour and nutrients in them. The stalks do take a bit longer to cook so add them into your pan before the florets. Also, make sure you don’t overcook the broccoli as it will lose it’s bright green colour!

Ingredients for this Keto Broccoli cream soup
1 broccoli head (approx 450g)
1 litre of homemade chicken or beef broth or if you have no time to make broth yourself, you can buy some prefab bone broth.
2 tbsp of organic pine nuts (toasted)
Himalayan SaltOrganic pepper to taste
Organic Nutmeg2 tbsp of organic full-fat coconut cream
optional: some fresh sugar-free smoked salmon cut into small pieces
Method for this Keto Broccoli cream soup
Remove the stalks of your broccoli and thinly slice them
Bring the broth to boil in a large pot and add the stalks and broccoli
Add the Himalayan salt, nutmeg and pepper
Boil slowly for 10 to 15 minutes
Keep an eye on the broccoli – it should be tender but still retain it’s bright green colour
Once cooked, remove the pan from the heat and blitz with a hand blender or food processor until smooth
In a separate dry, hot pan toast the pine nuts until they are golden
Season with salt and pepper in case you need more taste to the soup and drizzle with the coconut cream
Finally, top with the toasted pine nuts and enjoy!

It might not be the sexiest of vegetables but broccoli is an essential part of a healthy diet, especially the keto diet as it’s very low in carbs (about 1.5g per 100g). The little amount of carbs it does contain come from something called ‘dietary fibre’, which don’t count towards your daily carb allowance.
It contains almost no fat and a minimal amount of sugar. (compared to fruit at least) most of those carbs come from dietary fibre.
