Did you know you can enjoy pizza and still remain in ketosis?! Just because you’re on the keto diet doesn’t mean you should deprive yourself of your favourite foods. Our super easy gluten and dairy free keto pizza dough is sure to fulfil your carb cravings without making you fall off the wagon. And did we mention that it only takes 15 minutes to make?! Bonus – you don’t even need to turn the oven on. Our keto pizza has a slightly crispier texture, similar to a pitta, making it a great base for lots of meaty toppings.
This keto pizza dough recipe will yield one large 11” pizza, depending on how thin you roll it out, but you could always make a smaller individual pizza and refrigerate the rest of the dough for another day. It will keep for just under a week in the fridge. This dough is also extremely versatile and could even be used to make cinnamon rolls if you fancy a sweeter dish!
When deciding on the thickness of your pizza crust we’d recommend going slightly thinner and rolling the edges over to form the crust. This is because the dough will thicken while cooking anyway.
As for the actual dough, we’ve tried to keep it as carb-free as possible, with a mix of almond and coconut flour. Other (crucial) ingredients include xanthan gum and baking powder.
Make sure you pick the finest almond flour you can get your hands on as it will make a real difference to the texture of the dough – and don’t skimp on the xanthan gum.
Ingredients for this Keto pizza dough recipe
For the keto pizza dough:
- 96g organic almond flour
- 24g organic coconut flour
- 2 tsps of xanthan gum
- 2 tsps of baking powder
- ¼ tsp of organic Himalayan salt
- 2 tsps of organic apple cider vinegar
- 1 egg lightly beaten
- 5 tsps of purified water or broth
Method for this Keto Pizza Dough recipe
Place the dry ingredients (almond flour, coconut flour, xanthan gum, baking powder and salt) in a food processor and pulse until thoroughly mixed.
While the mixture is still being blended pour in the apple cider vinegar and then the beaten egg. Then add the water one teaspoon at a time until it forms a sticky dough. You may need more or less water depending on the consistency of the dough. It should bind into a ball and be slightly sticky, yet firm enough to roll. Always start with less and add more if needed!
Cover the dough in cling film and knead for 2 minutes. Continue until the dough is smooth and any cracks are gone. If the dough is still too tough try putting it back into the food processor and adding more water.
Leave to rest for ten minutes at room temperature and in the meantime heat a large pan or skillet.
To roll the dough place it under some greaseproof paper and then, before rolling, place another sheet of paper on top.
The thickness of the dough is down to personal preference but we prefer a thinner base with the edges curled over to form a crust. Remember, when cooking, the dough will thicken anyway.
To cook the crust place the dough top down on your pan. The pan should be piping hot at this point. Wait for about two minutes or until the dough is blistered before lowering the heat on the pan.
Once lowered, flip the crust over, add your toppings and cover with a lid to cook through. You could also transfer it to a grill or oven at this point but our way is easier and quicker!
